Sprinkle or rub a little of your rub onto each side of the pork chop, then let them sit for at least 15 minutes at room temperature so the flavors start to seep into the meat. This time will also ensure your pork chops have time to warm to room temperature, as chops that are still cold in the middle will cook unevenly.
How long you need to cook your pork chops for will depend on the temperature you set your pellet grill at and how thick they are. You will need a meat temperature probe to know for sure, so make sure you’ve got one to hand if your grill doesn’t come with one.

You can grill your pork chops at high heat for a fast meal, but for the kind of flavor that will make you think you’ve died and gone to heaven, give your pork chops a little more time on the grill.
Fast: On a grill set at 450F, this will take about 12 minutes in total, with 6 minutes a side.
Slow: On a grill set at 225F, your pork chops will take about 1 hour 15 minutes to reach 145F.
In the Middle:Set your grill to 300F and allow them to cook for about 30 minutes until they reach 145F.
Once they reach 145F, pull them off the grill and let them rest for 5-10 minutes to let the flavors settle in the meat. Then serve and enjoy!
Should I grill my pork chops with the bone in?
You can choose to cook your pork chops with the bone or without – provided you give the chops ample time to cook to the right internal temperature, it won’t make a huge difference to the finished result. Grilling with the bone can help the meat retain moisture and flavor, so cooking with the bone in is a good idea if you’re going to grill your pork chops for a longer period.
