BBQ Smoked Chicken Quarters

These perfect BBQ smoked chicken leg quarters are extra tasty! It is full of flavor, it's cooked to juicy perfection, and it's smoky!

Ingredients

  • 3 chicken leg quarters
  • 15 g paprika
  • 20 ml canola oil
  • 15 g paprika
  • 10 g salt

Instructions

  • Preheat your pellet smoker to 325°F.
  • To season the quarters, start by rubbing the quarters with canola oil. This is to prevent the quarters from drying out and help spices stick to the meat.
  • Sprinkle a generous amount of paprika and garlic powder on the meat. Repeat on the other side.

  • Add some salt to the skin side.
  • Place the quarters on the bottom rack of the grill, bone side down. Cook for 35 minutes. Then flip and cook for another 35 minutes.

  • Chicken quarters are done at an internal temperature of 165-175°F.

  • Remove the meat from the grill and serve with sweet corn or your favorite sides.

    How about using tablespoons and teaspoons instead of grams?

      Grams are more precise and repeatable. The amount of paprika in a teaspoon can vary depending on whether you pour&sweep or pack it in, just like flour or sugar. If you need 5-10 g of 8 different ingredients, that’s easy; you get one small bowl dirty, you “tare” the scale after you add each ingredient to it. With teaspoons/tablespoons, you either need multiple sets or you’re constantly washing and drying. A small battery-powered scale is cheap.
