SMOKED HALIBUT

This smoked halibut is what dreams are made of. With low-fat content and perfect protein, this dish is ideal for a holiday table or any occasion. The flavors are stunning to the eyes and the palate.

 

INGREDIENTS

  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup kosher salt
  • 1 tsp ground coriander
  • 2 lbs fresh halibut

 

INSTRUCTIONS

  1. In a small bowl, mix the sugars, salt,and coriander together. Season the halibuton all sides.
  2. Wrap the halibut in plastic wrap, place on a rimmed sheet pan,and brine in the fridge for 3 hours.
  3. Remove the plastic wrap and rinse the fish. Pat it dry. Set it on a drying rack over a sheet pan for 1-2 hours in the fridge.
  4. Heat the smoker to 200 °F. Smoke the fish for 2 hours or until itsinternal temperature reaches 140 °F.
  5. Serve your preferred sauce with the fish.
