I have a pretty full life, and while I'd love to tend a fire in an
old-school
offset barrel smoker, I just don't have that kind of time. Before
getting my
Cruiser, anything I cooked "low and slow" was done sous vide and then
seared to
finish.
But I wanted more: I wanted honest smoke flavor. The Cruiser totally
delivers.
I cooked a pork **** sous vide, chilled it, and kept it in the fridge
for two
days
then fired up the smoker to bring it up to serving temperature.
I used a
light dusting of powdered egg white, moistened with a spray
bottle,
to get the surface sticky, then applied my own dry rub. Only
took two
hours to get the core temp up to 135F,
and I had a very moist **** with great smoke flavor. Did
something
similar with a trimmed brisket point. Sous vide 48 hours at 131,
then shocked in an icewater bath for 30 minutes, getting the
core temp
down to 95F. Debagged, dried, applied dry rub as above, smoked
at 180
for 2.5 hours to get the core temp up to 130,
wrapped in foil and rested for 30 minutes until the core temp
stabilized
at 135 or so, sliced and served.
I'm about to leave on a 3 month road trip in my RV, and I'm
taking the
Cruiser with me.
I do my major cooking outside the coach via sous vide,
and I love that I'll be able to put fabulous finish on meat and
chicken
without having to fire up a cast iron skillet on the cooktop
inside the
RV.
